Southwest snack mix, maybe without the popcorn.

snacks
After school the girls often have popcorn for a snack. Erin now has braces so that is out. I want a quick, easy, simi health but filling snack to have on hand. We all love trail mix. I was thinking of having a container and making seasonal snack mix. I might do 2 containers and keep one peanut free for when we have peanut allergy friends over. Here is a link to one fun one, Seasonal snack mix. I'd love to collect a whole bunch to keep it interesting. I like one I posted here a while ago.

That's a great idea, Eileen. The Southwest link isn't working for me, but I'd love the recipe. Sounds fun!
ReplyDeleteI came across this recently from Food & Wine and thought it looked great - chocolate, pb and pretzels, my favorite combos!:) A little more on the sweet treat and less on the healthy spectrum, but I thought I'd share regardless.
2 c coarsely broken mini pretzels
1/4 c brown sugar
2 tablespoons granulated sugar
1/3 c dry milk powder
6 tablespoons unsalted butter, melted
12 oz mini chocolate candy bars, such as Reese's, chopped into 1/2-in pieces.
Preheat over to 275. In a bowl, combine the pretzels with the sugars, milk powder and butter. Spread the moixture on a parchment paper-lined baking sheet and bake for about 20 minutes, until fragrant and lightly browned. Let cool completely. Transfer to a bowl and mix with the candy.
Also just saw: 4 cups granola, 12 oz. mini chocolate chips, 1/2 c raisins, 1/3 c. each chopped, dried apricots and pineapple.
