Ham Leftovers

What are you planning to do with your Easter Ham leftovers? I have sandwiches (grilled ham, cheese and tomato) planned, and Pasta Carbonara with ham and peas. I usually throwthe bone in the crockpot with some white beans, onion and garlic; but my hubby is on a limited diet these days, and beans are not included:( I welcome your suggestions and recipes!

  1. There is a yummy recipe in this month Gourmet for jsut this reason. They are these yummy little apps I was think of making a kids meal out of it. Ham, cooked rice,eggs, bread crumbs, parmesan and some oil to pop it in. The are yummy and simple. It's just inside the cover pages. I was to call then Ham crustides.

    We also make ham salad for sandwiches (great with cornichons and some whole grain mustard) and then DH always wants to make soup with the bone!

  2. Those rice balls sound great (aroncini with ham!) We made black beans and rice, but that would be off Manny's bean-restricted diet. Would split peas be OK for him?

    I often make Scalloped potatoes with ham and cheese, a great one-dish meal, and serve it with a salad.

    I'm going to try the ham salad too.

  3. Wow... I was clearly a wee bit tired last night eh? Please excuse my poor spelling/typing. Anyway, here is the link to the Gourmet recipe called Ham and Rice Croquettes.

    Ingredients

    * 2 cups cooked white rice, cooled
    * 3/4 cup finely chopped cooked ham (about 1/4 pound)
    * 1/3 cup grated parmesan
    * 2 large eggs, divided
    * 1/2 cup plain dry bread crumbs
    * About 3 cups vegetable oil


    * Equipment: a deep-fat thermometer

    Preparation

    Stir together rice, ham, cheese, 1 egg, and 1/4 teaspoon pepper. Put remaining egg (lightly beaten) and bread crumbs in separate shallow bowls.

    Heat 1 to 1 1/2 inches oil to 350°F in a 10-inch skillet over high heat. Meanwhile, dampen your hands and form 1/4-cup amounts of rice mixture into 2 1/2-inch cakes. Lightly coat with egg, then with bread crumbs. Fry croquettes in 2 batches, turning once or twice, until golden-brown, 2 to 3 minutes per batch.

    Here is the one review written so far:
    My daughter loved these. However, they were really a pain to make because the rice mixture falls apart as you are putting the little balls in raging hot oil. I would have added more Parmesan cheese as well.

  4. I don't have ham left overs, not even a Ham sandwich (boo hoo). But for the bone if beans are out my second favorite ham soup is a potato soup or a cheddar, broccoli. I also think your corn chowder would be good with a ham broth and meat.
    Here is an easy Broccoli- Cheese Soup
    2 TBSP butter
    1/2 c shredded carrot
    1/2 c onion
    2 tbsp flour
    1 (15 oz) jar Cheese and Salsa
    1 (14 oz ) can chicken broth
    1 (9 oz) package of frozen broccoli cut into smaller pieces
    1 c milk

    Melt butter in a large sauce pan, add carrots and onion, cook until tender. Sprinkle flour over stir to blend.

    Add all remaining ingredients, blend well. cook until thoroughly heated. Serves 4

  5. Funny, I'm trying to figure out the same thing.
    I was thinking Scalloped Pots with Ham, Ham & Cheese panninis (done in my waffle maker) or ham & cheese calzones/strombolis.
    I used to have a recipe for ham, cheese and asparagus in puff pastry that I really liked, but I have no idea where that recipe is. Hmmm....

  8. I just made the Ham and Rice croquettes for dinner. The house smells great, the kids can't wait to have them in their lunch box, and I completely disregarded the proportions (I always want more cheese) and used wild and white rice (it's what he had). It worked like a charm. Now I am off to eat the yummy little cakes with a side of mustard and some left over creamed onions. Yea for leftovers!

  10. I made Ham, Smoked Gouda and Asparagus Strata tonight! I just made up my own recipe, follow any strata recipe and add in what you have!

    It was good, Manny and I enjoyed it more than the kids (they are not huge egg dish fans:) Would do it again!
