Quick Spring Dinner Ideas

With Baseball, Art Shows, concerts, etc... in full swing I try to plan ahead and use the crock pot for meals that whenever someone gets home to eat there is dinner ready! For tonight I decided to try Shephard's Pie, as I had leftover Lamb from Easter. All I needed to do was make Mashed Potatoes and mix frozen veggies and gravy with the lamb. I will post later to let you know how it turned out! Thursday I will be doing

Beer Brisket (from Prevention Slow Cooker)
2 large onions
3-4 Lbs Beef Brisket, fat trimmed
1 bottle of beer
1/2 c chili sauce
2 tsp dried steak seasoning

Place onion in slow cooker, top with beef. Mix chili sauce, beer and steak seasoning. Pour over beef. Cook on low 10-12 hours. Thinly slice across grain. Use slotted spoon to remove onions and place on top of meat. Drizzle some cooking liquid over meat and serve on rolls!

Thai Chicken Wraps

This recipe was designated a lunch/snack recipe due to it's simpleness but of course can be used for a dinner as well.
Ingredients

•1/2 C. Creamy Peanut Butter
•1/2 C. of Prepared Pad Thai sauce (easily found in most grocery stores)
•1 Bunch of Green Onion
•4 Large Tortillas, Wraps, or Flatbreads
•1 Pkg - 7 Ounces of Tyson Chicken (or two 5 ounce cans)
•Leaf or Romaine Lettuce (We suggest Romaine. It's much stiffer and will hold up well in a pack for a day or two as long as it does not get overheated)

Package the above ingredients using whatever method suits you
Trail Preparation

In your cookpot (we suggest using hard anodized aluminum for its non stick properties) stir together the peanut butter, chopped green onions and pad thai sauce. Cook over medium heat stirring until sauce is mixed completely and warm. Do not overcook!

Layout a Tortilla or Wrap, top with lettuce, chicken and onions. Sauce over the top and then wrap burrito style.

Notes
You may also consider saucing the wrap first, then other ingredients but we find personally that having the sauce on the chicken imparts a better flavor.

The Dunican sisters were anti-grocery shopping today. I’m not sure what Regina ended up finding in her pantry and freezer to turn into dinner, but I had quite a coup, inspired by National Seafood Bisque Day, I combined the recipe the punchbowl.com page recommended with some inspiration from Ina Garten’s Shrimp Bisque (because I had all the ingredients on hand).

This recipe is truly a last-minute preparation. I made the whole thing from frozen shrimp to eating the piping hot bowl with a piece of crusty bread in 30 minutes. If you use frozen shrimp, skip the sautéing step, but the olive oil does add some depth of flavor to your bisque. If you don’t have white wine, you can substitute seafood stock or even water, but add a splash (less than ¼ cup of brandy, vermouth, or dry sherry at the end). Remember to take the center out of the blender when blending hot liquids; hot liquids tend to cause the blender to “explode” and are quite dangerous, so place a folded dish towel over the hole in the blender top to let the steam escape, and keep your hand on it so the top and towel stay in place.

Truly last-minute “National Seafood Bisque Day” shrimp bisque

1 T olive oil
1 lb shrimp, in shells, frozen is fine
1 bottle white wine
1 qt light cream
¼ t thyme leaves
1 pinch black pepper
1 pinch kosher salt
1 pinch cayenne pepper
If shrimp is thawed, sauté shrimp, shells and all, in olive oil; add thyme, pepper, and salt. Simmer shrimp in wine just until cooked (pink), overcooking shrimp will cause it to be tough. Pull shrimp from wine and chill in refrigerator until cool enough to handle. In the meantime, add cream to wine and continue simmering over low heat.

Once shrimp is cool enough, peel shrimp and place in blender; reserve 12 shrimp, peeled, with tails intact. Add liquid so blender is half full. With center of blender top out of hole, place folded dish cloth over hole. Keeping your hand on dish cloth, pulse blender until shrimp is chopped fine. Return to pot to warm over low heat. Stir in cayenne pepper. Serve immediately with two whole shrimp as garnish.

Moo Shu Beef Lettuce Cups

1 lb lean ground beef
1 c  yellow onion, thinly sliced
2 tbsp ginger root, fresh, minced
2 med garlic clove, minced
2 cup bok choy, thinly sliced
1 med sweet red pepper, thinly sliced
2 cup button mushrooms, thinly sliced
2 Tbsp low-sodium soy sauce
8 leaf bibb lettuce

Coat a large nonstick skillet with cooking spray and cook beef, onion, ginger and garlic over med-high heat for 5-7 minutes. Add bok choy, pepper, mushrooms and soy sauce; cook about 305 minutes. Spook about 1/2 c beef into each lettuce leaf. Yields 2 filled leaves per serving. Serve with extra soy sauce if desired.

George and I love it in the lettuce, but usually serve to the kids with tortillas.

Healthy Meals

My husband and I are trying to lose a little weight and get in better shape, and be healthier, in general. I have been adding extra fruits and veggies to every meal I can. 

I'd love some of your favorite healthy meals. If they are kid-friendly, all the better!

Yesterday I made a big pot of vegetarian chili. Added lots of mushrooms, peppers, onions, carrots, tomatoes, beans, and cilantro. We'll be having tonight, I like to let it sit a day, if I can. I will be foregoing my favorite toppings of cheese and sour cream. I think I'll toast some tortillas to serve alongside rather than a nice crusty roll.

I got this link in an email from BHG.com today: Effortless One-dish Chicken Dinners. Each one looked better than then last. I especially liked the looks of Ginger-curry chicken with lentils and leeks and Chicken with olives.

File under: You gotta try this! It's the simplest, nicest, chocolate treat ever!

Now, if you ask my kids what my favorite candy is, they'll tell y0u it's Junior Mints or maybe Mounds or Almond Joy. And I do love those, don’ get me wrong. But my favorite candy is Chunky. I’m just generally unwilling to pay $1 for a 1½" square of chocolate with raisins and nuts. Enter: Chocolate, Fruit, and Nut Clusters that arrived in my e-mailbox this week, as if from Santa, but really from Health.com Healthy Holiday Postcard ... Healthy Holiday?! This just got better! The sidebar on the recipe says it’s healthy because dark chocolate offers stress-busting (really?! no wonder I like it so much!) antioxidants, while cranberries may help fend off winter colds and fight stomach bugs.

The other thing I love about it is it’s a half-cup of everything. That, I can remember when I’m walking through the store with no idea where I left my shopping list (usually on the passenger seat of the car).

I tried it as written, but I’d like a little more dark chocolate and a little less sweet, so I might substitute darker bittersweet or more semisweet chocolate for the milk chocolate next time.

Chocolate, Fruit, and Nut Clusters
½ c (3 oz) semisweet chocolate chips or chopped baking bar, such as Ghirardelli
½ c (3 oz) milk chocolate chips or chopped milk chocolate bar
½ c dried cranberries
½ c coarsely chopped pecans, toasted
Place the semisweet chocolate and milk chocolate in a double boiler over simmering water; make sure the water is not actually touching the inner pan. Stir until chocolate is completely melted.

Stir in the cranberries and pecans. Immediately drop by level teaspoonfuls onto a wax paper-lined baking sheet. Refrigerate until chocolate is set, about 30 minutes. Clusters will keep in the refrigerator up to 5 days.

Second (or third or fourth) time around

What are you doing/did you do with the leftover turkey? I tried some different recipes, I'll post them later. Thanksgiving Strata for Brunch on Sunday, it was tasty, a good change. Turkey Enchiladas and of course Turkey Divan.
I just made the best—and one of the easiest & quickest!—leftover turkey meals I've ever made! I served it with white rice—to which I added leftover mashed butternut squash & a can of drained, rinsed black beans just before serving. It was adapted from www.cookinglight.com.

(BTW, I still have more turkey & a great stock (for this, I just put the carcass in my crockpot Thanksgiving night, fill with water & let it simmer for 12-24 hours), any ideas for a different soup or stew?)

Turkey Picadillo
Turkey matches well with the flavorful ingredients of this Cuban dish: tomato, chiles, cinnamon, and cumin. Serve with baked tortilla chips.
1 t olive oil
¼ c finely chopped onion
1 garlic clove, minced
1 c chopped tomato
2 T chopped jalapenos
1 T dark brown sugar
½ t ground cinnamon
½ t ground cumin
½ t black pepper
¼ t salt
2 T golden raisins
2 T capers
1 T red wine vinegar
1 T dry sherry
2 c chopped skinned cooked turkey
8 flour tortillas
Heat olive oil in a large skillet over medium heat. Add onion and garlic; cook 2 minutes, stirring occasionally. Add chopped tomato and green chiles; cook 1 minute, stirring frequently. Stir in brown sugar, cinnamon, cumin, black pepper, and salt; cook 30 seconds, stirring constantly.

Reduce heat to low. Stir in raisins, capers, vinegar, and sherry; cook 3 minutes or until thoroughly heated, stirring often. Add turkey, stirring to combine. Remove from heat.

Warm tortillas wrapped in foil in oven. Spoon about 1/3 cup turkey mixture onto each tortilla; roll up.

Makes 4 servings.
