Healthy Meals

My husband and I are trying to lose a little weight and get in better shape, and be healthier, in general. I have been adding extra fruits and veggies to every meal I can. 

I'd love some of your favorite healthy meals. If they are kid-friendly, all the better!

Yesterday I made a big pot of vegetarian chili. Added lots of mushrooms, peppers, onions, carrots, tomatoes, beans, and cilantro. We'll be having tonight, I like to let it sit a day, if I can. I will be foregoing my favorite toppings of cheese and sour cream. I think I'll toast some tortillas to serve alongside rather than a nice crusty roll.

    The chopped salad has cheese, but you don't need to add it and you can make the dressing without the sour cream!

    If you like Mushrooms, I added a mushroom stock recipe today that may be made dark enough to replace beef stock!

  3. Just keep it simple. At dinner I try to have a cooked veggie, a salad and a fruit plate. It means there is always enough for us to choose from and it is not a lot of extra work. Have the kids help, Molly is my salad maker and Maeve like to do a fruit plate.

  4. I have been putting out fruit after dinner. The kids gobble it down if it's washed and out. Not so much the hubby. I have been going through about 12 apples a week on 2 kids, so I know they are eating healthier. I try to put 2 veggies and a salad out at dinner when Manny is dieting. I read that 2-3 lofat yogurts a day, helps you with dieting (I know you are not a huge yogurt person, how about with frozen berries or chopped fruit in am, or in a fruit smoothie, frozen for a dessert treat)?

    From "365 Easy Low calorie Recipes"

    Lemon-Banana Whip

    1 package low calorie lemon gelatin, 1/2 cup boiling water, 1 1/2 cups crushed ice, 1 small ripe banana, cut into chunks

    Put gelatin in a blender or food processor. Add boiling water. Cover and blend 5 seconds to dissolve gelatin.

    Add ice and banana chunks. Blend 20 seconds longer, or until smooth and "whipped". Spoon into 4 dessert dishes. cover and refrigerate until serving time.
    Prep time: 2 minutes, Serves: 4, Calories: 29
    (I substituted low calorie strawberry jello and strawberries and it was delicious.)

  5. We were having Bridget's Mexican Chicken Stew for dinner. And I wanted to get the kids a little more excited but didn't want to do corn chips.
    I remembered this fruit salsa and cinnamon chips recipe. Not too bad for you and a bit like a treat.
    Fruit Salsa

    1 lb strawberries
    2 apples
    2 kiwi
    1 cup raspberry
    2 Tbsp white sugar
    1 Tbsp brown sugar
    3 Tbsp fruit jam

    Mix together. Refrigerate 15 min.

    cut flour tortillas into triangles. Spread on pan, spray with olive oil. Sprinkle with cinnamon and sugar. Bake 8-10 min or until brown.

    I cut the sugar, brown sugar and jam in half and added 1 tbsp of orange juice. I also used what fruit I have. Tonight it was clementines instead of Kiwi and frozen raspberries.
