I have finally convinced my husband to eat salmon now that I have been making this delicious Maple Salmon recipe I found on allrecipes.com. There are over 1,000 reviews for it on the site, so others must agree!

ReplyDeleteI have an awesome Cheesy Vegetable Enchilada recipe which I'll post as soon as I can lay my hands on it (basically, put all your leftover veggies, a can of black or kidney beans, some frozen corn, and a can of diced tomatoes or salsa in a skillet. Season with chili powder, cumin, salt, and pepper. Put some of the sauce from skillet on the bottom of a baking dish. Roll 8 tortillas each with 1/3 c veggie mixture and 1 T shredded cheddar, place seam-side-down in the baking dish. Top with sauce from skillet, sliced black olives, and more cheddar. Bake until top cheese is melted. Serve with salsa, sour cream, sliced green onions, and guacamole.
That Maple Salmon sounds awesome. I'll have to have it with the kids some night (Fred's allergic, or something).
What is it with husbands and Salmon:) I'll try the Maple one, maybe mine will eat it! Tonight it's Pasta with Marinara and ricotta. Friday is Veggie Chili. At least once during lent I have to do Fish and Chips (Gortons takes care of that:) as well as my Shrimp and Orzo. I'll keep you posted!
ReplyDeleteWe did Shrimp and Black beans last night. I'll post the recipe later. I think the little guys and I might do Pizza Fritz or the pizza bites that are posted on this site on Friday since Holland and Daddy will be at the Father-Daughter dance.
ReplyDeleteKate, I did fish tacos with tilapia last week that we all loved. I'll look for that recipe, too. You marinated the fish with cilantro and lime (a combo I can't resist!) I didn't even want cheese or sour cream!;) I also grabbed the makings for stuffed shells.
