What's for dinner this week?

I am looking at our schedule for the week, and like many of you, I will be spending a lot of time driving to various activities, practices, games, etc. Added to that, this week, my husband (who almost never has to travel) will be traveling some. So, I am trying to plan my menu for the week to accommodate the days we may need to eat on the run, eat early or eat late. Here's hoping advance planning will help my week run a bit more smoothly.

I always love to hear what others are doing for inspiration -- what are you making for dinner this week?

    I'm sure you can adapt your own recipe to make them handsize (plus it mentioned they were great in lunch boxes:) I'm going to try them: Mac N cheese, Meatloaf and Chicken and Rice.

    Another article had meals in wrappers, buffalo chicken egg rolls, and crab cakes. More work, but a change of pace, especially if they can be frozen and pulled out as needed.

    Yesterday, I finally saw shaved steak at the meat counter, so we're have Cheesesteaks on Thursday. Tonight is a Ham (from Easter), Smoked Gouda and Asparagus Strata (I'll let you know how it was,), then it's Roast Beef Sandwiches; hot and open face if you're home, otherwise in a bag to go, for those running to 3 activities:) Beef Pot Pie on Wed with the last of the Roast Beef. Friday will most likely be Pizza after a later game, or appetizers with friends:)

    My kids often ask for my coctail meatballs for dinner, could be on a roll, in a bowl with rice. Let me know what you try:)

    Here's my thoughts for the week:
    Monday: Shrimp Scampi with pasta, spinach and cherry tomatoes
    Tuesday: Black bean and cheese burritos (George will be gone and Holland has a softball game, so we will either eat when the kids get home from school or bring them to the game with us).
    Wed: Grilled Chicken with Roasted Tomato & Oregano Salsa (from self.com)
    Thursday: We are out at activities from about 2:45-7 so I want to have something that will be ready when we get here.
    Slow Cooker Char Siu Pork Roast (from cookinglight.com)
    Friday, I'm going out, so G is on his own with the kids!;)

  3. Ok, Here is mine.
    Tonight - homemade pizza
    Tuesday - pasta of some kind
    Wednesday - Pork loin, browned potatoes, asparagus _Mom and Dad's first night
    Thursday - My in laws will be joining us- barbecue turkey, mashed potatoes and green beans
    Friday - venison steaks on the grill
    Maybe a turkey leftover night (pot pie) or duck with pork egg rolls. Over the weekend.

  4. Ok, I love the mac and cheese muffins! Let me know how it goes, It would be a great school lunch for Molly next year she loves home made mac and cheese and may not be too big a fan of school lunches.

  5. This week's biggest hits were:

         salad with grilled chicken breasts*
         steak and cheese "subs"**

    *When the day started out gorgeous, the plan was "grilled" chicken, then the temperature dropped 14° in about an hour, and we got caught in a downpour at Will's baseball game, so it was sautéed chicken breasts. Still, everyone was happy: Jude & Will made wraps, Grace dipped the chicken and carrots in blue cheese dressing. Such a hit that we're having it again tonight.

    **Growing up I would've called these "wedges," but having lived in Massachusetts now longer than I lived in New York (or even New York & Pennsylvania combined), they're subs. Evan made them because Fred & I were at the Bruce! concert, so it was even better as far as I'm concerned!

  7. Growing up in Methuen, Fred had Chicken Barbecue sandwiches. The oddity? Nothing barbecue-y about them. It's basically a boiled chicken (I put one onion in the crockpot along with the chicken and do it that way), pulled apart, piled on a bulky roll with iceberg lettuce and mayo. I have no idea where the "barbecue" comes from!     Anyway, whole chickens are on sale this week, so I think we'll have chicken barbecue sandwiches on one of the busy nights.

    I can always used the extra chicken for quesadillas or enchiladas on another night.
