Zucchini Bars (from my former neighbor Marie:)
Sift together
3 C flour
1 1/2 t baking soda
1 t baking powder
1 t salt
1/8 tsp nutmeg
1/8 t cinnamin
cream together:
3/4 C butter or margarine
1 C brown sugar
1/2 C sugar
1 t vanilla
2 eggs
Combine both and add:
2 C finely shredded zucchini
1/2 C chopped walnuts
1/2 C butterscotch chips or raisins
Pour into greased and floured 10 X 15 jelly roll pan. Bake at 375 for 20-25 minutes.
CARAMEL FROSTING:
1/2 C butter
1/4 C milk
1 C brown sugar
1- 1 1/2 C powdered sugar
Melt butter, add brown sugar and bring to a boil for 2 minutes. Add milk and bring to a 2nd boil. Remove from heat. Add enough powdered sugar to spreading consistency. Beat until it loses its gloss. Spread warm on cake.
The other night I made rice and after it was cooked, I grated a little zucchini on top and let it sit for a few minutes before serving it as a side dish. Holland knew I was doing it and was a little resistant, but we all really enjoyed it. It was delicious!
