Food for a family at a difficult time

We have a family that the Mom just had open heart surgery. I am signed up to bring dinner one night next week.   Any suggestions?  I tend to resort to Lasagna when bringing food for others.  What are some other good options?

  1. I did fajitas for a friends family last year, with guac and salsa and rice and beans.
    You could do soups, pulled pork, casseroles, like Mrs. McCormack's chicken divan or Bridget's shrimp and orzo.

    1 1/2- 2 pounds Plum tomatoes ( I usually use diced)
    2 C orzo
    1 1/2 t unsalted butter
    1 t dried basil
    2T olive oil
    3 cloves garlic
    1 pound shrimp (or chicken or combo)
    black pepper and salt to taste

    2 T oregano
    9 oz Feta cheese

    Cook orzo as per package directions, drain, return to pan add butter.

    Saute garlic in olive oil 3- 5 minutes. Add tomatoes and basil, cook until soft, about 10 minutes. Add shrimp cook 3-4 minutes until opaque. Add salt and pepper if using.

    Combine feta and oregano in separate bowl. Assemble in baking dish orzo, add the shrimp tomato mixture and then top with Feta and oregano. Heat for 5 minutes at 450 degrees.
    (if made ahead heat later at 400 degrees upto 30 minutes until heated through)

    Regina, fajitas are a great idea! And much more kid-friendly than many crockpot or make-ahead-and-freeze meals.

    My "go to" meal is chicken pot pie. It’s perfect for the freezer and the kids usually love it. In fact, at my house, if I am tired of everyone complaining about what we've been having for dinner, I make that & a batch of mashed potatoes.

    Soups are always good, if you have a favorite you make. If you don't, two of my more popular ones are Italian Peasant Soup and Mexican Tortilla Soup. I’ll post the recipes in the next couple of days.

    Beef stew is often a good one, but people do that, like you said about lasagna.

    I usually do a salad to, because that could be a
    meal in itself.

  6. I was just re-reading this post because a family around here just lost their mother far too young. A site used here a lot is lottsahelpinghands.com. Just another resource.
