At Chez Habib, we’ll be eating on the run (or late, and therefore light):
Monday - Italian tomato and bread salad with grilled round steak (dinner in shifts, but it’s a nice day out and we watched the Food Network Steak Grilling Challenge last night — if you haven’t checked it out, Sam’s Club has great round steaks)Share, share! Your menu this week may be my menu next week.
Tuesday - Cinco de Mayo Chicken and black bean enchiladas (we’re also bringing appetizers to the baseball game to have a little moveable fiesta)
Wednesday - Caesar salad with grilled chicken breasts (dinner in shifts again)
Thursday - Ratatouille (dinner in shifts again)
Friday - Grilled pizza (what are your favorite toppings?)
Monday -- Stuffed, baked potatoes tonight, with salad (just me and the kids before they go to religion)

Wed. -- Turkey Sloppy Joes (need a crockpot meal that will be ready for us to eat before Holland's violin concert)
Thurs. -- Honey Sesame Chicken Thighs (another crockpot meal)
Friday -- Holland has a softball game in Jersey. I may give them leftovers before going, or eat there.

Since I don’t get home from work until at least 6:30 every day, I need to make something quick & easy most nights…
ReplyDeleteMonday - Sweet & Spicy Pork Tenderloin (bite-sized pieces of pork tenderloin tossed with taco seasoning; sauté in oil until cooked; add jar salsa and 2 tbsp peach or apricot jam; cook until jam melted and salsa heated; serve over white rice – yummy!)
Tuesday – Cinco de Mayo Chicken Fajitas
Wednesday – Whole Wheat Pasta with Homemade Meatballs and Sauce (sausages too)
Thursday – Steak tips on the grill, Salad and Brown rice
Friday – Take-out or Pizza…

Wednesday: Pulled Pork Sandwiches and veggies and dip, in between school and town ball (from freezer, made a double batch last time:)

Regina, I'll post the Spinach & Sausage Pie to it's own message. I made a double batch in a sheet pan for yesterday's Teacher Appreciation Luncheon, they virtually licked the platter clean.

Bridget, could you post the Chicken Gyro recipe. I love gyros, sounds like something we'd like to try.

ReplyDeleteI just grilled the Chicken breasts (I should have marinated them, I'm not sure in what), I purchased Tzatziki Sauce at BJs,served on warmed pitas topped with chopped cucumbers, tomatoes and lettuce. Here's a recipe I found, it looks good. Let me know if you try it!
