This was another popular dish at the Teacher Appreciation Luncheon yesterday, and I’ve had another request for the recipe.



Spinach and sausage pie
1 lb sausage, browned

10 oz baby spinach

1 c cottage cheese

½ c milk

4 eggs

12 oz mozzarella cheese, shredded

½ t salt

1 t garlic powder

2 11-inch pie crusts
Combine all ingredients except crust. Place in crust. Cover edges with foil. Bake at 350° for 40 minutes. Remove foil. Bake an additional 30 minutes. Remove from oven and let stand 20 minutes before slicing. Serve hot.
