Great Glazed Cupcake Recipe?

We are having a ladies lunch for my best friend, who is expecting her 3rd baby, in a couple of weeks.
I have a great floral cupcake pan from Pampered Chef (https://www.pamperedchef.com/ordering/prod_details.tpc?prodId=13837&words=floral%20cupcake) and am looking for a delicious cupcake recipe to use in it. Because the tops have such a pretty flower design, I don't want to cover in frosting. I am open to different flavors.

  1. Does it have to be cupcakes? I have a recipe for mini chocolate cheese cakes made on cupcake pans on chocolate mint cookies, like a thin mint. It was really good and easy, I made them a few years ago for mothers day. I also remember that they freeze well. Let me know if you are interested and I'll dig up the recipe.

  4. Katie- Do you make Molten cakes? Reggie found this recipe she suggested to me. I'm thinking of it for Thanksgiving but worried about making it before hand do they need to be warm? Can they be warmed up w/o drying out? Any suggestions?

  5. Eileen, I make molten cakes often, and I can post my recipe if you like. I don't recommend baking them ahead. They bake relatively because they're small. They can be made ahead and refrigerated (or even frozen) and you can put them in the oven when everyone sits down to dinner. They're extra good with a little vanilla ice cream or homemade whipped cream and some raspberry coulis.
