My husband will be traveling next week, and I will still have to be shuttling the kids back and forth from events, so I need thing that can be ready when we walk in the door, ie. crockpot meals, or shortly after we arrive home, or in-between runs.
Any fun, tried-and-true meal ideas? I usually try to make fun meals when George is away, but I'm not sure I can keep that up for a week...

As you and I discussed yesterday, when Fred's not home for dinner the kids & I go with things he'd prefer not to eat anyway. Some of these include:
ReplyDelete*breakfast for dinner
*baked macaroni and cheese
*salmon (he's allergic)
*tuna-noodle casserole
I also like to let each of my kids choose a meal if we have subsequent nights like that. It makes life a little more interesting (and taxes your brain a little less, let them get mad at each other instead of you ;-)
I received this email from myrecipes.com yesterday, Slow is the New Fast (http://www.myrecipes.com/recipes/gallery/0,28548,1665398,00.html?iid=edit-dt-092109). The tacos and the fondue sounded like especially fun nights.
I also saw Quick Fix Meals with Robin Miller on Food Network this week and she did Colorful Slow Cooking (http://www.foodnetwork.com/quick-fix-meals-with-robin-miller/colorful-slow-cooking/index.html). I don't always like everything she prepares, but this show looked like it had some good recipes, especially the # Black Bean Soup (though I'm not sure if I'd include the crab meat) and the White Pizza with Chicken, Pesto, and Pine Nuts.
When Brad is gone we go to the store and each one gets to pick something. It usually ends up being stuff we never eat, spegetti O's, corn dogs and chicken nugget type stuff. We also love the pizza rolls posted here a while ago. http://chaosinthekitchen.com/2008/10/party-food-pizza-in-a-bite
ReplyDeleteI also do fondue but that's not really a quick meal. I forgot to mention at the store I buy brie and crackers or the ingredients for artichoke dip and that is my treat to myself all week as well. Good luck.
Pizza fondue! Microwave tomato sauce with mozzerella and stir. Then let the kids pick the dippings, Italian bread, meatballs, pepperoni, veggies, my kids especially love mushrooms in it, even bread sticks
