This looks like such a simple, easy appetizer/snack-y dinner idea. I think it would be perfect for get-togethers and kids' parties. Also, while the original recipe calls for pepperoni, I'd love to experiment with it.

Brad had a meet tonight and was not home for dinner. I decided to try these. The girls loved them!! Erin said it was the best meal they had in weeks. Maeve tried to correct her and say in a week and Erin said "No weeks."
ReplyDeleteI made 1/2 of them with peperoni and the second tray stuffed with left over ground beef. I just made my normal pizza dough but might try the one listed next time.
I can't wait to try them. Maybe with sauteed chopped mushrooms for me, or chopped black olives and onions, or even leftover Chicken Parm:) What was wrong with your regular dough?
ReplyDeleteNothing really, it is a 1/2 wheat, so a little heavy for this. But the girls didn't mind, they'd like them everyday. Now if I could just get your Goddaughter to eat soup.
ReplyDeleteTry floating goldfish in it. Or how about little meatballs? Give her minimal broth? Let them use the tortilla scoops as spoons for a thicker soup. What if she helps make it?
ReplyDeleteWe had Pizza Bites and a salad last night! The Mannys weren't as thrilled, I think maybe it didn't seem enough as meal like to them. I had made them the night before and refrigerrated them, I took them out 40 minutes before cooking, but some seemed doughy, would bring them to room temp and let them rise if I did them ahead again. Also I had shredd cheese, it worked ok, but I'm sure the hunk of melted cheese would be much better. I enjoyed the mushroom and black olive ones. TB wants me to cut up meatballs in it next time. Maybe Meatballs on the side would make it more of a "meal". I'd do them again most likely for an appetizer or part:)
ReplyDeleteEileen, I just remembered a "trick" I used when the kids were little and there was a meal they weren't looking forward to eating. I used our large pasta bowls, that we didn't often use as they were large and breakable:). I put a sticker under one of them. At dinner I announced the plot and told them whoever ate all their food could lift up their bowl and check underneath for a sticker. The sticker could be traded in for a lollipop. Every time we used those bowls they asked for the stocker even if it was something they loved (Do you remember Pocantico doing that around the holidays for a free second slice of pizza?) Not sure if it will help get Maeve to eat soup or if it'll just make for more rivallry. Let me know if you try it.
ReplyDeleteEileen, it's so sad that Maeve doesn't like soups. Have you tried bread bowls? They make them more fun. Also, pasta always makes a thicker soup. Check out the Rachael Ray cookbook we gave Erin, she has "stoups," they're thicker than a soup, but thinner than a stew.
ReplyDeleteI made the pizza bites on Friday. What if you made them to go along with minestrone soup? She could dip them in the soup?
My last suggestion would be to combine her very favorite flavors and foods into a soup. She might not be able to resist it.
