Lenten Meatless Meals

We often eat non-meat meals a couple of times a week, but for some reason when there are specific days that I need to make sure we eat meatless meals, it seems to add to the pressure. What are some of your favorite meatless meals?
I found Butternut Squash Ravioli yesterday, so I think I will do that with caramelized onions (maybe even a sprinkling of blue cheese) and a salad.

  1. Regina, yours sounds so much better -- and more imaginative -- than mine. We're having clam chowder (sans bacon) in bread bowls (from frozen dough) and a big salad.

    I'm hoping to do more salads this Lent to offset the lack of meat for my boys.

    Friday we're having homemade pizza. I haven't done it in a while and Evan's been asking.

  2. I just picked up some swordfish and I got a nice loaf of sourdough bread. I was also thinking potato cheddar soup. I often do eggs or pancakes. Erin's been asking for french toast so I'll probably do that.

  3. We sat down last week and came up with a list of requests. Here's what we'll be eating this Lent!

    Fettuccine Alfredo
    Gnocchi with Blue cheese Sauce
    Seafood or Mushroom Ravioli
    Veggie Burgers
    Potato and Onion Torta
    Broken Noodles
    (Pasta topped with tomatoes, veggies, artichoke hearts and black olives)
    Homemade Macaroni and Cheese
    Pasta with Red Pepper Pesto
    Parma Rosa Pasta
    Veggie Chili
    Red Beans and Rice with Peppered Corn Bread
    Fillet of Sole with Lemon butter
    Salmon
    Bisquick Tomato and Zucchini Pie
    Cajun Catfish
